Maple Roasted Asparagus with Pecans

Once upon a time, there was a girl who despised asparagus.

Granted, she had never actually had asparagus. But she could tell just by looking at it that this was a vegetable to be avoided at all costs.

Fortunately, this silly girl realized one day that she was indeed being silly. After all, it wasn’t really fair to judge the asparagus by it’s weird appearance.

So she gave it a try….

and BAM! She loved it.

I know I just threw a pecan-based recipe at you and here I am proffering up another.

What can I say? Pecans are awesome. So is asparagus. Awesome + Awesome = Awesomer.

Maple Roasted Asparagus with Pecans

Materials

  • 1 pound asparagus
  • 1/3 cup pecans, roughly chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon balsamic vinegar

Methods

1. Preheat oven to 400 degrees F.
2. Chop pecans.
3. Toss cleaned asparagus with pecans, syrup and vinegar.
4. Spread on lightly oiled pan and place in oven. Roast for ~30 -35 minutes (give them a little stir once or twice).
5. Enjoy!

Results & Conclusions

Yum.

Yep, that’s all I’ve got for you: yum.

Even if you’re not an asparagus fan, give these a try. The winning combination of maple and pecan will win you over.

(though if you’re not a fan of asparagus…I’d be happy to take it off your hands :))
