The grill’s shining moment

As much as I looove being in the kitchen, the great outdoors is always calling my name.
“Heatherrrrr….come outside….come enjoy the vast natural wonder that is..um…your backyard.”

Okay, so I’m not hiking in Alaska, convinced that the creepy guy we just passed has a knife and will kill us all, or wandering blindly through the freezing mist of Haleakala wondering if I’ll ever see food again – been there, done that, didn’t get the t-shirt.  (hmmm – those stories are too awesome to confine to one sentence – remind me to tell you the full-length versions one day).

However, when I’m home and given the chance, I’m outside. Whether I’m out in the garden, admiring the burgeoning tomatoes or cursing the destruction of our bean plants (what is your deal, rabbits??), throwing Sherlock’s grody tennis ball (so lovingly dubbed ‘Rotten Ball’) or simply kicking back with a good book, it doesn’t matter – just as long as I’m out in the fresh air, soaking up some good ol Vitamin D.  Sidenote: I just got this cookbook. I read through the entire thing in one sitting. It is hilarious. End of sidenote.

So, it makes sense that when I’m outside, I don’t really want to be running back inside to cook. And that’s where the grill comes in, my friends. I heart our grill. Andrew does not. Andrew is pretty sure our grill failed the grill competency exam and should never have entered the workforce. But I say ‘So what if it tries to burn your hand off when you ignite it, heats unevenly and has unpredictable flames? That just adds to the adventure! Plus, we got it on Craigslist, and everyone knows that Craigslist finds are always in perfect working order.’

I’ll just ignore the fact that Andrew almost always does any cooking on the grill. That’s beside the point.

But the dish I’m about to share with you – that was all me, baby (well except for the igniting-of-the-grill part – Andrew had to do that; you think I want to burn my hand off??)

This is a cobbler. Not a pie, not a tart – but a simple, juicy, mm-mm-good cobbler. It’s ridiculously easy to throw together and even easier to cook: you just throw it on the grill. Well, actually, I wouldn’t recommend throwing it – that would be pretty messy and those unpredictable flames might get you when you try to clean it up.

Black & Blue Cobbler

Materials

  • 3 cups blueberries
  • 1 cup (or pint) blackberries
  • 1/3 cup + 2 teaspoons raw sugar
  • 4 tablespoons vegan margarine (not pictured)
  • 3/4 cup almond milk
  • 1.25 cups + 2 tablespoons spelt flour
  • 2 tablespoons baking powder
  • olive oil

Methods

1. Lightly oil a cast-iron skillet.

2. Add berries to skillet,

and then gently stir in 2 tablespoons of flour and 2 teaspoons of sugar, coating berries evenly.

3. To prepare the dough, melt margarine (microwave ~ 30 seconds) and then stir in almond milk. In a separate bowl, whisk together flour, sugar and baking powder. Add the dry to the wet, stirring just until combined and major lumps are broken up.

4. Spoon the dough over the berries. My tool of choice is the all-purpose ice cream scoop:

5. Fire up the grill to slightly hotter than medium heat and place the skillet on the grate. Close the grill and cook for ~20 minutes.

Your grill probably functions way more efficiently than ours so really the time I just told you is most likely irrelevant. Just check on it occasionally. It’s done when the berries are bubbling and the dough has cooked up much like a biscuit.

6. Remove from the grill (turn the grill off!), contemplate sneaking away to have it all to yourself and graciously offer it to your friends and family (hoping they say no thank you). Geez, I’m a terrible host, huh?

Results & Conclusions

This cobbler is seriously good. And by good, I mean this tasty package of bubbling berry goodness will rock your world.

Do you SEE those berries, oozing their wonderful fruity contents? Go ahead – get excited.

Grab a spoon and start eagerly scooping your piece of the pie cobbler into the nearest reasonable vessel.

Yes, a mason jar will do just fine.

‘But Heather, wouldn’t this be even better a la mode?’ you may be asking…..

to which I reply, ‘Heck yes it would!’

Quite frankly, this cobbler fan-freakin-tastic. So, go get yourself some berries (possibly 10 pounds of them) and give your grill a boost of confidence by letting him know that why yes he can cook desserts too, thankyouverymuch.
